What is Layali Lubnan?
Layali Lubnan is a Lebanese Dessert, made from a silky semolina-based pudding, topped with Ashta (thick cream), whipping cream and pistachios. The word Layali Lubnan means Lebanese Nights. This dessert is known for its fragrant smell of rose and orange blossoms.
Garnish of chopped Pistachios and dried rose petals gives it a royal look and that drizzle of sugar syrup giving it a unique glossiness. Anyone trying this simple and quick recipe would surely become a fan of this scrumptious treat.

This dessert is one of the easiest desserts you can make. It’s the most made dessert at home and very easy to make, most families prefer to make this dessert for many occasions. Layali Lubnan is the 5-ingredient dessert consists of semolina (sooji/rava), milk, sugar, fresh cream and rose water (or orange blossom water.)
Step#1: Making the Base
Layali Lubnan (Lebanese Nights Dessert) base is made from Semolina (sooji/rava), which is also known as Durmun Wheat. There is fine semolina and coarse semolina so please be careful when you buy it. You will need coarse semolina for this recipe.
Place the pot on medium heat and dry roast the semolina first then add milk and keep stirring until it starts boiling. On low-medium heat continue the stirring until the texture is very thick like a pudding. Then let it cool completely and spread the cream layer.
Step#2: Prepare the Sugar Syrup
Combine the sugar water and rose water and cook until thickens.
Step#3: Spread the Cream Layer and Garnish
Buy a good quality of liquid heavy cream to whip up for this recipe (the one you use to decorate a cake.) Whip the cream and gradually add the icing sugar as the cream starts to thicken up.
Note: I used Puck Cream (250ml) and I did not whip it up because it is the best thick cream that can be used as it is without whipping. If you are using another brand that is liquid in consistency then you must whip the cream first.
Garnish and drizzle sugar syrup on top and you are DONE!! You can store this dessert for up to 2-3 days in the fridge.

Ingredients
FOR THE BASE:
- 1/2 cup Semolina Sooji/rava, coarse
- 1/4 cup Sugar
- 2 1/2 cups Milk (full fat milk)
- 2 1/2 TBSP Rose water (if using rose essence then 1tsp)
- 1 TBSP Orange blossoms water optional, if you don’t have, then skip it
FOR CREAM TOPPING:
- 250 ml Thick / Fresh Cream
- 3 cups Heavy Whipping Cream very well chilled
- 3/4 cup Confectioner Sugar
- 1 TSP Vanilla extract
FOR SUGAR SYRUP:
- 1 cup White Sugar
- 1/2 cup Water
- 1 TBSP Rose water 1tsp if using essence
- 1 TSP Lemon Juice
FOR TOPPING:
- 1/4 cup Pistachios (or as needed) , chopped
- Edible dried rose petals as needed
Instructions
- Place the pot on medium heat and dry roast the semolina.
- Then add milk and keep stirring until it starts boiling.
- Once it starts boiling, reduce the heat to low, stirring constantly until the mixture thickens up very well like a pudding. This will take anywhere between 10-15 minutes.
- Remove and place onto a Pyrex bowl that’s 9 x13 inches. Cover with plastic food wrap and let it cool at room temperature for 20 minutes. Then place the bowl in the fridge to cool down completely for 30-45 minutes.
- Meanwhile, prepare the sugar syrup: Bring the sugar and water to boil.
- Once it starts boiling, let it boil for 8-10 minutes and then add in the lemon juice.
- Boil for another 1-2 minutes and then add in the rose water.
- Stir well and then remove from heat.
- Cover and let it cool in room temperate until it’s ready to be served with the dessert.
- To make the Cream layer: Chill the heavy whipping cream in the freezer for about 10 minutes.
- Remove and whip up the cream until it starts to get firm, adding in the sugar gradually.
- Cover and place in the fridge to chill until the base is ready.
- When the base is ready, remove the plastic food wrap and top the base with the fresh cream. Spread it evenly.
- Decorate it generously with the chopped pistachios and edible rose petals.
- Drizzle the sugar syrup as much as you like the sweetness.

- Use Coarse Semolina for best result.
- Use full-fat whole milk.
- Use full-fat fresh whipped cream.
- Stir contiguously while you making this dessert.
