Homemade Chicken Puffs Recipe

Chicken Puffs are everyone's favorite!! These puffs are loved to be eaten as evening special snacks, in teatimes, They are very common in kids' parties or you can make your friends happy in kitty parties.

Ingredients
  

For Chicken Filling:

  • 2 Cups Chicken Boiled with salt & pepper & shredded
  • 2 Cups Onion Sliced
  • 4 to 5 Tbsp Green Chili Paste thick, (Heaped)
  • Salt to taste
  • 1 teaspoon Black Pepper Powder
  • 1 teaspoon Cumin Roasted & Crushed
  • 1/3 Cup Milk
  • 2 Tbsp Corn Flour Leveled
  • 2 Tbsp Oil
  • 1 Tbsp Ginger Garlic Paste

(Note: The quantity of onion and boiled shredded chicken should be same, but it's totally your preference, how much you like!)

    Other Ingredients:

    • 1/2 Kg Puff Pastry Homemade
    • All Purpose Flour as needed, for dusting
    • One medium Egg well beaten

    Instructions
     

    Step:1 To make Chicken Stuffing/Filling

    • Heat a wok and add oil.
    • Add sliced onions & fry till onions are light brown.
    • Add ginger garlic paste and sauté for few minutes.
    • Now add green chili paste and salt. Mix well and cook for 2 to 3 minutes.
    • Meanwhile, in a bowl add milk, corn flour, black pepper powder & roasted crushed cumin and mix well.
    • Then add milk-spice mixture with the wok's ingredients and mix well.
    • Then add boiled & thick shredded chicken and mix again.
    • Cook for 2 to 3 minutes and then switch off the flame.
    • Let it cool completely at room temperature.
    • The filling/stuffing is ready.

    Step:2 To make Chicken Puffs/Patties

    • Dust all-purpose flour on your kitchen countertop and roll the puff pastry. Roll slightly thin (about 4-5 cm.)
    • Then use puff cutter (Round Side) and cut some rounds. (for the bottom layer)
    • By using the leftover pieces roll puff pastry again, this time slightly thick  (about 7-8 cm.)
    • Cut some curl-shaped rounds with the help of a curly edge cutter. (for the top layer) (Note: The round ones are little thin for the bottom layer and the upper ones curl-edged layers should be thick)
    • Now take a wide baking pan and place all round cutting puffs on the baking pan.
    • Brush little water on top of the round puffs.
    • Then place 1 tablespoon of chicken filling in the center of each puff.
    • Now cover with the top layer (curl puff pastry piece.)
    • Use small round cutter (glass, any jar lid etc) to seal the uppermost layer by pressing the top slightly.
    • Brush each top layer with the beaten egg.
    • Repeat this process for all puffs and pop in the preheated oven to bake.
    • Place the tray on the second rake position and bake at 200°C for about 25 to 30 minutes.
    • To give a perfect nice golden brown color on top you can on your oven's grill for 2 to 3 minutes.
    • Taddaaaa!!!  Crispy and delicious Chicken Puffs are ready to be served! :)

      Notes

      #1: If you don't want to roll puff pastry 2 times then divide your dough into two equal portions and roll half portion thick and half as thin.)
      #2: Roll with slow hands otherwise, all your puffs (layers) would be merged together and your puff pastry would be ruined and useless.
      #3: Your chicken filling should be cooled completely. Never ever stuff hot filings into puff pastries.
