There are many types of Pie and pastry recipes in Turkish cuisine from savory to sweet and have been known to enjoy the odd slices of sweet baklava on occasions, too. But I’m a big fan of the savory pie and pastry dishes. Today I’m presenting my new creation of Turkish Pie filled with deliciously tender mutton meat (Laham) and vegetables. And off course, it is SO healthy!
Turkish mutton pies are usually cooked in tandoors in Turkey but this time I baked the pie crusts in my oven and believe me the result was amazing.

I cooked the meat until fully tender but moist and fluffy. I cooked my favorite veggies like peas, carrot, zucchini, mushrooms etc.. and filled in the pies. My family loved these pies and was finished in NO time!!

Turkish Mutton Pie Recipe
Ingredients
FOR THE FILLING:
- 1 kg Lamb/Mutton (with bones)
- 2 medium-sized Onions (chopped)
- 6 medium-sized Tomatoes (seedless and chopped)
- 1 medium-sized Zucchini cut into thick slices
- 1/2 head Cauliflower florets only
- 1/2 head Broccoli , florets only
- 1 large Carrot cut into thick slices
- 1 cup Peas (fresh/frozen), washed
- 1 inch Cinnamon Stick
- 1 1/2 TSP Salt
- 1 TSP Black Pepper Powder or freshly crushed
- 1/4 TSP Turmeric Powder
- 3 medium-sized Green Chillies chopped
- 3 Garlic Cloves pounded coarsely
- 1/4 piece Ginger chopped
- 2 TBSP Vinegar
- 1/2 TSP Basil fresh, chopped
- 1/2 TSP Rosemary fresh, chopped
- 1/2 TSP Parsley fresh, chopped
- 4 TBSP Olive Oil divided
FOR THE PIE DOUGH:
- 3 cups All Purpose Flour
- 1 TSP Salt
- 1 TSP Sugar
- 1 TSP Yeast
- 2 TSP Baking powder
- 4 TBSP Olive Oil
- 1/2 cup Milk (for binding)
- Water as needed (for binding)
OTHER INGREDIENTS:
- 1 small Egg well beaten (for the glaze)
- Sesame Seeds Black/white – to garnish
Instructions
Step#1: Marinate the Meat
- Marinate meat with salt, vinegar and turmeric powder, mix well and keep in the fridge for overnight. 24 hours are needed to make the mutton more flavor and tender. Vinegar and will act as a meat tenderizer if you keep it overnight. (Highly Recommended!)
Step#2: Make the Pie dough
- In a large bowl put flour and all the dough dry ingredients (except milk and water), mix well with hands.
- Now add milk and mix gradually, then add little water at a time to bind and knead a soft and smooth dough (like the one you knead for the chapatis)
- Cover the dough and let it rise for at least 2 -3 hours.
Step#3: Cook the marinated meat
- In a pressure cooker add two tablespoons of oil and braise the chopped onions to pinkish color.
- Now add mutton pieces, cinnamon stick and mix well add little water and let it cook till tender.
- After that remove the lid and dry if there is any water. You can add peas this time so that they can cook with the mutton as well. Remove the bones when done. Keep aside.
Step#4: Cook the vegetables
- In a big wok add two tablespoons of oil. Keep the flame on. Add garlic and ginger as soon the oil heats up. Sauté for a minute.
- Then add tomatoes, all veggies, green chillies, salt and crushed black pepper. Braise them for five minutes at least and then add mutton pieces with peas, adjust the seasoning and remove from the flame add fresh or dried herbs, mix well and take them out. Let it cool down completely.
Step#5: Bake the Pie
- Grease three round baking trays or pizza pans with little oil and set aside.
- Divide the dough into six portions and roll them into round rotis or chapatis. (not more thick nor very thin)
- Place the rolled pie on the greased baking tray and place the one-third of the mutton-veggie mixture on it.
- Cover with the other rolled pie roti and seal the sides, glaze with beaten egg and sprinkle some nigella seeds (kalonji) or black sesame seeds on top.
- Bake the pies in the oven at 200 ⸰C until the top is browned up.
